This is a very common and traditional greek dish. It originated in India, but the simplicity and the very little requirement of ingredients made it a staple in greek cuisine.

Ingredients

  • Halvah:
  • 1 cup oil
  • 2 cups semolina flour
  • 3 cups water
  • 4 cups sugar

  • Aromatics:
  • 4 cinnamon sticks
  • 4 sticks of clove
  • 1 star anise
  • 1 tsp allspice
  • Orange peel

Directions

  1. In one pot you heat the oil and add the semolina flour and stir vigorously.
  2. Let it on medium heat to cook.
  3. The mean time add the water and the sugar with the spices.
  4. Bring it to a boil and let cook till it reaches a syrupy consistency.
  5. Remove the spices and the orange peals and keep them for decoration.
  6. Slowly add the syrup into the pot with semolina and the oil.
  7. Stir very fast and in only a few minutes you will see the mixture will start setting.
  8. Remove from the heat and after letting it cool for a while put in a form.
  9. A couple of hours later you can flip it on top of a plate and you are done!
  10. Decorate it with the orange peals and the spices.

Tips

  • Once you make it a could of times you can change the basics, the liquid, the fat and the spices.
