Spinach Pie

This is one of them most famous greek dishes. Although most commonly made with phyllo dough, the authentic recipe requires a homemade crust.

Ingredients

  • The crust:
  • 1/2 cup olive oil
  • 1 2/3 cup water
  • 1/3 cup of soda water
  • 1 lb all purpose flour
  • 1 tbsp salt

  • Filling:
  • 2 lb. of frozen chopped spinach
  • 1/4 cup of olive oil
  • 1 big white type onion
  • 2 bunches of scallions
  • 1 bunch of dill
  • 2-3 cloves of garlic
  • 1 lb. feta cheese
  • 1 1/2 tbsp of cumin
  • 1 1/2 tbsp freshly ground pepper
  • 1 tiny pinch of salt

  • Glaze:
  • 1/4 milk
  • 1/4 cup olive oil

Directions

  1. Work the flour and the oil until the texture resembles rice. Mix the other two liquids and the salt and start adding the flour.
  2. Let in the refrigerator to relax and give time to the flour to absorb the liquid, for as long as 3 days ahead.
  3. Start by defrosting the and draining the frozen spinach.
  4. Squeeze it tightly to get rid of all the water.
  5. Continue by heating up the oil over medium heat.
  6. Add the onion finely chopped with a the salt.
  7. Add the garlic and stir to cook.
  8. Add the spices (1 tbsp of pepper and 1 tbsp cumin) and let them give their aroma.
  9. Cook it till the onions becomes translucent.
  10. Turn the heat down to simmer and add the scallions (with most of the green part) and the dill.
  11. Kill the heat and let them in there to slightly cook.
  12. Add the last part of the spices, the spinach and the feta cheese grumbled.
  13. Stir vigorously to mix everything.
  14. Take dough out of the refrigerator and divide it in two parts one a bit bigger that the other.
  15. Use a dough roller and make it as thin as possible.
  16. Roll it around the roller and lift. Place it on a well oiled pyrex dish.
  17. Add the filling.
  18. Roll out the remaining dough and cover the pie.
  19. Crimp the edges to seal the sim to close it tightly.
  20. Mix the oil and the milk and spread it on the top.
  21. Bake in 350F oven for 45 mins.

  • You can easily turn this to any shape you like, from twisted shape to turnovers.
