Cheese Pie (tyropita)

This is my mom's special pie. I love everything about this pie. I tried to replicate it many times until I gave up and decided to just get it at her house.

Ingredients

  • 1 lb of feta in brine
  • 2 eggs
  • 1 stick of butter
  • 14 tbsp of semolina flour
  • 4 cups of milk
  • 1 lb of phyllo

Directions

  1. In a pot warm up the milk and add slowly the semolina flour.
  2. Simmer it for 10 mins or until it starts thickening.
  3. Beat the egg whites to a foam and then add the yolk.
  4. Add the egg mixture in the milk and flour mixture and stir well.
  5. Crumble the feta and add it in the mixture too.
  6. Oil a pan and add sheet by sheet the phyllo dough spreading some oil and butter in between.
  7. Add the mixture and fold over the excess phyllo.
  8. Follow with the rest of the phyllo.
  9. At the end brush some egg wash and with a sharp knife score the pieces.

Tips

  • In the milk and semolina mixture you can add any cheese you like, from feta to cheddar.
